Maggie's Oatmeal chocolate chip cookies donated by Maggie Horan Lacouture

Ingredients:
1 c. veg. shortening
1 stick unsalted butter
1 c. plus 2 T. light brown sugar, lightly packed
3 large eggs
1 1/2 t. baking soda
1 1/2 t. salt
1 1/2 t. vanilla extract
1/2 c. dry powdered milk
2 c. all purpose flour
1 c. whole wheat flour
1/4 c. ground or milled flaxseed
2 c. rolled oats
2 c. chocolate chips or raisins or any combo of chips(at Halloween I cut up all the reeses cups we had left and threw them in- yummy!)

Preheat oven to 350°
In the large bowl of an electric mixer, cream Crisco, butter and both sugars. Beat until creamy Add eggs one at a time, mixing thoroughly. With mixer still running, add soda, salt and vanilla. Turn off mixer, and add powdered milk, all flours and flax. Mix on slow until thoroughly mixed in. Dough is very dense.
Stir in oats and chips. Shape dough into cookie-size balls and place on non-greased cookie sheet. Or use a cookie - dough scoop. (There is a lot of dough. Refrigerate or freeze extra dough between shaping/baking.) Bake cookies for 11 to 14 minutes. (Shorter baking time makes for a chewier cookie)

Minty White bark donated by Marybeth Alix

12 large crushed candy canes
1 cup chopped walnuts
1 lb. white chocolate

Directions:
Bring water to a full boil; put chocolate in top of double boiler and remove from heat. When melted, add crushed candy canes and chopped walnuts.

Spread on tin foil like peanut brittle. Let harden. Break into pieces. Store in airtight container.

This makes a very good Christmas gift.

Spaghetti pie dinner Donated by Hattie Alix

6 oz. spaghetti
2 tblsp. butter or margarine
1/3 cup grated parmesan cheese
2 well beaten eggs
1 cup cottage cheese
1 pound ground beef or sausage
1/2 cup chopped onion
1/4 cup chopped green pepper
1 can 8 oz. crushed tomatoes
1 can 6 oz. tomato paste
1 tsp. sugar
1 tsp. dried oregano
1/2 tsp. garlic salt
1/2 cup shredded mozzarella

Directions:
Cook the spaghetti according to package directions: drain (should have about 3 cups spaghetti). Stir butter or margarine into hot spaghetti. stir in parmesan cheese and eggs. form spaghetti mixture into a crust in a buttered 10 inch pie plate. Spread cottage cheese over botton of spaghetti crust.
In skillet cook ground beef or pork sausage, onion , and green pepper till vegetables are tender and meat is browned. Drain off excess fat. Stir in undrained tomatoes. Tomato paste, sugar, oregano, and garlic salt; heat through.
Turn meat mixture into spaghetti crust. Bake, uncovered, in 350 oven for 20 minutes. Sprinkle mozzarella cheese atop. Bake 5 minutes longer or until cheese melts. Makes 6 servings.

M&m Cookies


2 Cups all purpose flour
3/4 Tsp. Baking Soda
3/4 Tsp. Salt
1 Cup Softened Butter
2/3 Cup Sugar
1/2 Cup (firmly packed) Brown sugar
1 Egg
1 Tsp. Vanilla Extract
12 Oz. Pkg. M&Ms
3/4 cup chopped Nuts ( optional)

Direstions:
Preheat oven to 375. Combine Flour, Baking Soda, and salt; set aside. Cream together butter and sugars until light and fluffy. Beat in Egg and Vanilla. Blend in Flour mixture slowly. Stir in M&Ms and nuts.
Drop heaping teaspoonfuls onto and ungreased cookie sheat.
Bake 8-11 minutes until browned. Cool 1 minute on cookie sheet; place on wire cooling racks.
Makes about 5 dozen 2-inch Cookies. YUM!!:)

Auntie B's sugar cookies

Auntie B's Sugar Cookies

1 cup Sugar

1/2 cup Butter/Margarine

2 Eggs

2 1/4 Cups Flour

1 1/2 Tsp. Baking Powder

1/2 Tsp. Salt

1/2 Tsp. Nutmeg

1 lemon rind

1 Tblsp. Milk


Directions:
Cream Shortening; Add Sugar then eggs. Beat well. Add dry ingredients, grated lemon rinds and milk.
Roll and cut into desired shapes. Place on ungreased cookie sheets. Bake at 375 for 7 minutes.
Cool, and Enjoy!:)

Chicken Piccata (lemon chicken) donated by Mary Horan

Ingredients:
4 Boneless, Skinless Chicken Breasts
1/2 cup flour
1/2 tsp. salt
1/2 tsp. pepper
1/4 cup melted margarine
1/4 cup white wine
2 tblsp. lemon juice

Directions:
Coat chicken in flour, salt, pepper. Cook chicken in melted margarine in heary skillet until browned. Add white wine, and lemon juice. Bring to a boil. Simmer uncovered about 3 minutes or until center is no longer pink.

Place on warm platter and spoon sauce over all.

This meal is probably my families favorite!!!

Spinach Salad donated by Dick Borgey

Ingredients
12 oz. washed fresh spinach
1/4 c. grated parmesan cheese
1/2 c. fresh mushrooms
1/2 c. virgin olive oil
1/4 c. balsamic vinegar

Directions: WAsh spinach and shake dry. Cutup mushrooms. Combine mushrooms, spinach, and parm. cheese in large bowl. Sprinkle with pepper.

Combine balsamic vinegar and olive oil in shaker or put in bowl and wisk for one minute to emulsify.
Pour vinegar and oil combo over spinach and mushrooms and serve.

(Will keep in Refrigerator over night even after dressed.)

This meal is very healthy and delicious!
